Andean Trout
Sourced from over 12,000 feet above sea level in the Peruvian Andes, our trout grows in fast-renewing freshwater lakes. With its firm texture and clean taste, it’s naturally suited for premium cold-smoking. Free from antibiotics and responsibly farmed with recognized certifications, this trout reflects our commitment to the Andean ecosystem through respectful and regenerative aquaculture.”
Wayuu Sea Salt
We cure our fish using salt hand-harvested by the indigenous Wayuu community in Manaure, La Guajira, Colombia. Its mineral-rich profile and artisanal extraction method infuse each bite with a unique depth of flavor, cultural heritage, and character.
Mountain Panela (Muscovado)
In our curing process, we use “panela” from the hills of Villeta, Colombia. Unrefined, 100% natural, and rich in B vitamins, calcium, iron, potassium, and magnesium, this ancestral sweetener elevates our recipes blending flavor, wellness, and tradition.
